80 g/3 oz butter 500 g/1 lb 2 oz baby onions
1 1⁄2 teaspoons sugar salt


1.Melt the butter in a pan, add the onions and a pinch of salt and cook over a low heat, stirring with a wooden spoon, until the onions have absorbed some of the butter.
2.Sprinkle with the sugar and add just enough warm water to cover. Cover and cook over a low heat until the liquid has completely evaporated and the onions are lightly caramelized.
3.Transfer to a warm serving dish. This delicious dish is an ideal accompaniment to roast meat.
