200 g/7 oz Gorgonzola cheese, crumbled
300 g/11 oz stracchino cheese, such as taleggio, diced
100 g/3½ oz robiola cheese, diced
100 g/32 oz butter, softened
walnut halves, to garnish
raw carrots, to serve


1.Put the 3 cheeses and the butter in a food processor Serves 6-8 and process to a soft, even cream.
2.Line a tart tin with cling film. Spoon in the mixture, smooth the surface and cover with more cling film.
3. Chill in the refrigerator for about 3 hours. Turn out on to a serving dish and garnish with walnut halves arranged in a circle.
4.Serve with raw carrots.
