.For the dough
.In a bowl, mix all the ingredients with a spoon, and then with your hands, until there is a nice and elastic dough.
.Shape a ball, wrap it in plastic wrap, and put it in the refrigerator for about half an hour.
.For the filling
.In a bowl, mix all the ingredients apart from the cookies.
.Add the cookies slowly by mixing, until the mixture is not too watery but slightly thick.
.To assemble - bake
.Preheat the oven to 180°C (356° F), set to fan.
.With a rolling pin and some flour, roll out the dough to a sheet 2-3 mm thick and with a knife, cut 10x10 cm pieces.
.In the center of each one, put 1 teaspoon of the filling.
.Fold in half by creating a triangle and connect the two ends.
.Do not overfill the cookies because the filling rises during baking, while the dough shrinks.
.Transfer the cookies into a baking pan lined with parchment paper.
.Bake them for 20-25 minutes or until they turn golden.
.When they cool down, sprinkle with icing sugar and serve.
