15 g/½ oz butter, plus extra for greasing
1 avocado, medium
1 tablespoon Gruyère cheese, grated
150 g/5 az milid Gouda cheese, grated
2 tablespoons double cream
1 egg yolk, lightly beaten
4-6 white bread slices, crusts removed
juice of 2 grapefruit, strained


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Grease a baking sheet with butter.
2. Pour the grapefruit juice into a small saucepan and add the butter, Gruyère and Gouda.
3.Sprinkle with salt and pepper. Stir in the cream and cook over a low heat, stirring constantly, for 10 minutes.
4.Remove the pan from the heat and stir in the egg yolk. Return to the heat and cook, stiring until smooth; do not allow the mixture to boil.
5. Spread the slices of bread with the mixture and place on the prepared baking sheet.
6.Bake for a few minutes until lightly browned. Serve hot.
