50 g/2 oz butter
100 g/3½ oz lean cooked ham, very finely chopped
4 white bread slices, crusts removed
8 baby artichokes in oil, drained, to garnish
2 tomatoes
salt and pepper


1.Cream the butter, then beat in the ham.
2.Cut the bread slices in half and spread with the ham mixture
3.Garnish by placing a baby artichoke, opened out like a small rose, in the middle of each half-slice.
