butter, for greasing 1 teaspoon curry powder 1 quantity Bechamel Sauce
6 eggs 1 tablespoon freshly grated Parmesan cheese salt


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Grease an ovenproof dish with butter. Stir the curry powder and a pinch of salt into the bechamel sauce.
2. Shell the eggs and halve lengthways. Scoop out the yolks into a bowl and mash with 2 tablespoons of the curry sauce.
3. Spoon the mixture into the egg whites, arrange them in the prepared dish, spoon the remaining curry sauce over them and sprinkle with the Parmesan.
4.Bake until golden and bubbling.
