25 g/1 oz butter
25 g/1 oz plain flour
150 m/4 pint Meat Stock
1 tablespoon grated horseradish
a pinch of sugar


1.Melt the butter in a small saucepan.
2.Stir in the flour and Cook, stirring constantly, until the flour turns brown.
3. Stir in the stock. Add the grated horseradish and sugar and cook, stirring frequently, for 10 minutes.
4.For poached meat.
