4 white bread slices, crusts removed
4 small buffalo milk mozzarella cheese balls, halved
4 salted anchovies, heads removed, cleaned and filleted and halved
2 tomatoes, sliced
chopped fresh flat-leaf parsley, to garnish


1.Preheat the oven to 220°C/425°F/Gas Mark 7. Cut the slices of bread in half.
2.Place half a mozzarella cheese and an anchovy fillet on each. Arrange tomato slices all round.
3.Place the canapés on a baking sheet and bake for a few minutes until the cheese has melted.
4.Sprinkle with parsley and serve. 1
