Ingredients

1/2 tablespoon olive oil
8 slices bacon, finely chopped
large onion, finely chopped
garlic clove, crushed
4 hot green chilis, finely chopped
mild red chili, deseeded and finely chopped
4 tomatoes, skinned and roughly chopped
1/2 teaspoon sea salt teaspoon freshly ground black pepper
8 eggs
4 plain 8-in./20-cm flour tortillas
Tomato salsa, to serve
This dish is hot, which makes it a great hangover cure, particularly when served with a large hair-of-the-dog Bloody Mary, If you prefer it slightly milder, just reduce the amount of fiery green chili appropriately, Top it all off with a tomato salsa and enjoy, ideally sat outside in the sunshine wearing very dark sunglasses!

Instructions

1.Heat the oil in a skillewrying pan and gently fry the bacon until almost cooked
2.Add the onion and garlic to the pan and cook, allowing fo brown lighny.
3.Add the chilis, tomatoes, salt, and pepper, stir well, and cover.
4.Bring to a boil, reduce the heat, and simmer for about 20 minufes,stirring frequently, Meanwhile, fry or poach the eggs Io your taste and gently warm the tortillas in a skilletor warm oven
5.To serve, place 2 eggs per person on a warmed tortilla and liberally spoon the salsa over the eggs. Eat immediately!
