
2 cups diced tomatoes | |
2 cups diced cucumber | |
1 cup orange bell pepper, or any color | |
1/4 cup diced red onion | |
1/3 cup finely chopped flat-leaf parsley | |
2 tbsp finely chopped mint | |
2 tbsp fresh lemon juice | |
1 tbsp olive oil | |
salt and pepper, to taste |
1. | Add all of the ingredients to a mixing bowl and stir to combine. |
2. | Serve immediately or refrigerate for up to 2 days. |
