2 cups diced tomatoes
2 cups diced cucumber
1 cup orange bell pepper, or any color
1/4 cup diced red onion
1/3 cup finely chopped flat-leaf parsley
2 tbsp finely chopped mint
2 tbsp fresh lemon juice
1 tbsp olive oil
salt and pepper, to taste


1.Add all of the ingredients to a mixing bowl and stir to combine.
2.Serve immediately or refrigerate for up to 2 days.
