100 g/3½ oz ricotta cheese
1 yellow pepper, halved, de-seeded and finely chopped
4 shelled walnuts, chopped
4 thick slices mortadella, quartered


1.Place the ricotta in a bowl and stir until smooth.
2.Add the yellow pepper and walnuts and season with salt.
3.Spoon a little of the ricotta mixture on to the point of each mortadella triangle and roll up.
4.Place the parcels in the refrigerator until ready to serve.
