3 lemons, washed and thinly sliced. pips discarded
625 g (1 1/4 lb) granulated sugar
900 ml (1 1/2 pints) boiling water
25 g (1 oz) tartaric acid
ice cubes, to serve


1.Preheat the sloww cooker if necessary. Add the lemon slices to the slow cooker pune measurement boiling water and stir well until the sugar is almost all dissolved.
2. Cover with the lid and cook on with the sugar high for 1 hour. Reduce the heat and cook on low for 2-3 hours or until the lemons are almost translucent.
3.Switch off the slow cooker and stir in the tartaric acid. Leave to cool. Remove and discard some of the sliced lemons using slotted a. spoon.
4. Transfer the cordial and remaining lemon slices to 2 sterilized screw-topped, wide-necked bottles or storage jars. Seal well, label and store in the refrigerator for up to 1 month.
5.Dilute the cordial with water in a ratio of 1:3, adding a few of the sliced lemons for decoration, ice cubes and if liked.
6.FOR LEMON & LIME CORDIAL, prepare the cordial using 2 lemons and 2 limes, washed and thinly sliced, instead of 3 lemons. Serve diluted with sparkling mineral water and mint sprigs.
