half quantity Mayonnaise
1 tablespoon brandy
1-2 teaspoons tomato ketchup
4 wholemeal bread slices, crusts removed
1 small cooked lobster tail, shelled and sliced into 8 pieces
8 small fresh thyme sprigs, to garnish


1.Mix together the mayonnaise, brandy and ketchup in a bowl.
2.Cut the slices of bread in half and spread with the mayonnaise mixture.
3.Place a slice of lobster in the middle of each and garnish with a sprig of thyme.
