100 g/32 oz butter, softened
1 tablespoon chopped fresh flat-leaf parsley
lemon juice, strained, to taste
salt and pepper


1.Cream the butter in a bowl, then beat in the parsley, some salt, very little pepper and a few drops of lemon juice.
2. Make into a roll and wrap in foil
3.Chill in the refrigerator until set. Cut into slices to serve.
4.For steaks, escalopes or poached fish.
