Ingredients

2 egg yolks or 1 egg yolk and 1 egg
2 teaspoon English mustard powder
about 200 ml/7 fl oz sunflower oil or 75 ml/22 fl oz olive oil plus 125 ml/42 fl oz sunflower oil
2 tablespoons lemon juice, strained, or white wine vinegar
salt and white pepper
Mayonnaise is probably the best loved and most frequently eaten sauce in the world. It is almost always bought ready made and there are several good brands. However, it is useful to know how to make it by hand or in a food processor and it is worth savouring the delicacy of home- made mayonnaise...

Instructions

1.Always make sure that the oil and eggs are at room temperature; if they are too cold, the mayonnaise may not thicken.
2.Add the oil a drop at a time and do the same with the lemon juice or vinegar. If the mayonnaise separates into lumps suspended in oil, whisk a fresh egg yolk in another bowl and gradually whisk in the separated mixture a drop at a time.
3.The amount of oil will need to be increased to account for the new egg yolk. To make mayonnaise by hand, put the egg yolks in a small bowl.
4.Using a wooden spoon, beat in the mustard powder and season with a pinch each of salt and white pepper. Add the oil, a drop at a time, beating constantly with a small whisk or wooden spoon.
5.As soon as the mixture thickens, whisk in a drop of lemon juice or vinegar. Continue adding the oil, beating well between each addition.
6. When the mixture begins to look greasy on the surface, beat in a few drops of lemon juice or vinegar, beating constantly, until all the oil is used. Taste and adjust seasoning as required. If the mixture tastes too oily, add some salt.
7.To make mayonnaise in a food processor, place an egg yolk, a whole egg and the mustard powder in the food processor, season with salt and pepper and add 2 tablespoons of the oil and a drop of the lemon juice or vinegar.
8.Process for a few seconds at maximum speed. Drizzle half the oil through the feed tube with the motor running.
9.Add a teaspoon of the lemon juice or vinegar, then drizzle in the remaining oil through the feed tube with the motor running.
10. When the ingredients are thoroughly mixed, adjust seasoning and lemon juice or vinegar to taste to combine. For a lighter, whiter mayonnaise, whisk in 1 tablespoon boiled hot water.
11.Pour the mayonnaise into a sauce boat and store in the refrigerator. For boiled or roasted meat, raw or cooked vegetables or as a garnish.
