100g/3½ oz butter
salt and pepper
dash of lemon juice (optional)


1.Put the butter in the top of a double boiler or in a heatproof bowl and set over a saucepan of barely simmering water to melt.
2.When slightly frothy, add salt and pepper, stir and pour into a sauce boat.
3.To accentuate the taste of the butter, add a dash of lemon juice if you like.
