10-15 fresh mint leaves, chopped
1 tablespoon sugar
4 tablespoons white wine vinegar


1.Put the mint in a bowl and pour on 3 tablespoons boiling water.
2.Leave to infuse and cool slightly.
3.Stir in the sugar and vinegar and mix well
4.Leave the sauce to stand for at least 30 minutes before serving.
5.For boiled courgettes.
