Ingredients

Generous cup/50 a potato starch
½ teaspoon baking/ bicarbonate of soda
12 teaspoons baking
2 cup/70 g buckwheat flour
Scant ½ cup/60 g brown rice flour
3 tablespoons milled flaxseeds/linseeds
2 teaspoon sea salt
1 teaspoon ground cinnamon
2 cups/480 ml almond milk
2 eggs
1 teaspoon vanilla extract
Vegetable oil, for frying
Maple syrup, to taste
Handful of blueberries, (optional)

Instructions

1.Sift the potato starch, baking/bicarbonate of soda, and baking powder into a mixing bowl.
2.Add the remaining dry ingredients and set aside. In another bowl, combine the almond milk, eggs, and vanilla extract.
3.Add the wet to the dry ingredients slowly and whisk to make a thick batter.
4.Heat a little oil in a large skillet/frying pan over a medium-high heat.
5.Drop the batter from a spoon into the pan to form six round circles. Cook until small bubbles form on the top of each pancake.
6.Flip and cook for a further 3 minutes or until golden brown in color.
7.Serve the pancakes immediately, stacked on a plate and drizzled with maple syrup. Blueberries make a tasty addition, if desired, and are a powerful antioxidant.
8.NOTE: If you prefer not to eat eggs, use egg replacer or make a flax-egg mix by combining 2 tablespoons of ground flaxseeds/linseeds with 6 tablespoons of water.
