450 g/1lb mixed freshbeans such as borlotti and cannellini, shelled
1 shallot. chopped 50 g/2 oz French beans, trimmed
1⁄2 clove garlic, chopped 4 tablespoons olive oil
1 dried red chilli salt


1.Cook the beans and shal lot in sal ted , boiling water for 1-1 1/2hours until tender. Cook the French beans in a separate pan of salted, boiling water for 10-15 minutes.
2.Drain all the beans and mix together in asalad bowl with the garlic, olive oil and apinch of salt. Crumble in the chilli and mix again. Don't dress this mixed bean salad more than 10 minutes before serving.
