Ingredients

1 tablespoon vegetable oil 1 small onion, chopped 1/2 teaspoon cumin seeds
1/2 teaspoon chilli powder 1/2 teaspoon turmeric 1/4 teaspoon Garam Masala
250 ml (8 fl oz) water, plus 2 tablespoons 200 g (7 oz) can chickpeas, rinsed and drained
200 g (7 oz) can red kidney beans, rinsed and drained 1 tomato, chopped
1-2 green chillies, deseeded and chopped 4 garlic cloves, finely chopped
1 teaspoon finely grated fresh root ginger green pepper, cored, deseeded and chopped
2 teaspoons lemon juice 2-3 tablespoons fresh coriander leaves, chopped

Instructions

1.Heat the oil in a heavy-based saucepan, add the onion and cumin seeds and fry gently for about 5 minutes until lightly golde Stirn the other spices. Add the 2 tablespoons water and cook, stirring continuously, for 1-2 minutes.
2.Gently stir in the chickpeas, beans, tomato, chillies, garlic and ginger Mix well and stir in the 250 ml (8 fl oz) water. Bring to the boil, then reduce the heat and simmer for 15-20 minutes.
3.Add the pepper and cook for another 2-3 minutes. Stir in the lemon juice and half the coriander. Serve immediately garnished with the remaining coriander.

5.This versatile dish can be served with basmati rice and a crisp green salad, as a vegetable side dish with Tandoori Chicken (see page 120) or Kofta Curry (see page 122) as a topping for baked potatoes (see page 89) or cold as a salad.
