5-cm/2-inch piece of horseradish, grated
1 green apple, peeled, cored and chopped
juice of 2 lemon, strained
100 ml/3½ fl oz low-fat natural yogurt
100 ml/3½ fl oz double cream
1 baguette
200 g/7 oz speck or smoked ham, sliced
salt and pepper


1.Mix together the horseradish and apple in a bowl and sprinkle with the lemon juice.
2.Stir in the yogurt, then add the cream and season with salt and pepper to taste.
3.Spread the mixture on the slices of bread, top with a slice of speck or ham and serve.
