40 g/1 1⁄2 oz butter 500 g/1 lb 2 oz potatoes, very thinly sliced
500 g/1 lb 2 oz porcini , sliced 1oo g/31⁄2 oz freshly grated Parmesan cheese
3 tablespoons chopped fresh flat-leaf parsley salt


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Melt the butter in an ovenproof dish and make alternating layers of potato and porcini slices, sprinkling each layer with Parmesan, parsley and a little salt.
2.Add 5 tablespoons water, cover and bake for 1 hour. Remove from the oven, leave to stand for 5 minutes and serve.
