
3 tablespoons olive oil, plus extra for brushing | |
1 clove garlic, chopped | |
350 g/12 oz mushrooms, sliced 2 tablespoons chopped fresh flat-leaf parsley | |
1 quantity Pizza Dough | |
plain flour for dusting salt and pepper |
1. | Heat the olive oil in a frying pan, add the garlic and mushrooms and cook over a low heat, stirring frequently, for 5 minutes. |
2. | Season with salt and pepper, sprinkle with the parsley and simmer over a very low heat for about 30 minutes. |
3. | Preheat the oven to 220°C/425°F/Gas Mark 7 and brush a baking sheet with oil or line it with baking parchment. Roll out the dough on a lightly floured surface, then press it out on the baking sheet. Scatter the mushrooms on top and bake for 20 minutes. |
