25 g/1 oz butter
1 tablespoon olive oil
300 g/11 0z mushrOoms, coarsely chopped
175 ml/6 fl oz double cream
50 g/2 0z Emmenthal cheese, grated
8 large puffs
salt and pepper


1.Heat the butter and oil in a frying pan.
2.Add the mushrooms and cook for about 7 minutes until tender.
3.Stir in the cream and Emmenthal, season with salt and pepper and remove the pan from the heat.
4.Make a slit in the top of each puff and stuff with plenty of mushroom mixture.
5.Place on a baking sheet and bake in a preheated oven, 200 °C/400 °F/Gas Mark 6, for a few minutes to warm through, then serve.
