300 g/11 oz Caesar's mushrooms or other wild mushrooms
juice of 1 lemon, strained
400g/14 oz cooked prawns, peeled and deveined
olive oil, for drizzling salt and pepper
chopped fresh flat-leaf parsley to garnish


1.Thinly slice the mushrooms and sprinkle with the lemon juice
2.Mix the mushrooms with the prawns in a serving bowl.
3.Season with salt and pepper, drizzle with olive oil and garnish with parsley.
