2 tablespoons olive oil
25 g/ 1 oz butter 300 g/11 oz onions, thinly sliced
2 sprigs fresh thyme, leaves only 6 eggs• salt


1.Heat the olive oil and butter in a frying pan, add the onions and cook over a low heat, stirring occasionally, for 5 minutes.
2.Stir in the thyme and cook for a few minutes more. Meanwhile, lightly beat the eggs with a pinch of salt, then pour into the pan. Cook until lightly browned on both sides.
