80 g/3 oz butter
4 baby onions, finely chopped
2 egg yolks
6 fresh basil leaves, chopped
salt and pepper


1.Melt the butter in a saucepan over a low heat. Add the onione and cook, stirring occasionally, for 15 minutes.
2.Remove the saucepan from the heat and process the mixture in a food processor to a purée.
3.Scrape the purée into a bowl and stir in the egg yolks, mixing gently.
4.Stir in the basil and season to taste with salt and pepper.
5.For grilled fish or würstel (norti Italian sausage rather like a frankfurter).
