3 cucumbers, peeled and thinly sliced 1 sprig fresh flat-leaf parsley, chopped
1 sprig fresh chervil, chopped 1 clove garlic, finely chopped
juice of 1 lemon, strained 1 teaspoon Dijon mustard 120 ml/4 fl oz olive oil salt and pepper


1.Put the cucumber slices in a colander, sprinkle with salt and leave to drain for 30 minutes. Rinse, drain, pat dry and put in a salad bowl. Add the parsley, chervil and garlic.
2. Mix together the lemon juice, mustard and olive oil in a bowl, season with salt and pepper and pour the dressing over the cucumbers. Toss well and serve.
