Quantities of rice and water will vary according to requirements


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Pilaf means rice in Turkish, so obviously this is Turkish-style rice. Melt the butter in afairly shallow, ovenproof pan, add the chopped onion and cook over a low heat for 5 minutes until softened.
2.Add the rice and a pinch of salt and stir until the rice is th0roughly coated in the butter. Pour boiling water or stock to cover, 1 litre/1 1⁄4 pints per 500 g/1 lb 2 oz rice, bring back to .the boil, then cover the pan and place in the oven.
3.Bake without uncovering or stirring for 18-20 minutes.
4.Before serving, stir in a knob of butter. Pilaf is usually served with shellfish, prawns, langoustines, chicken in egg sauce, mushrooms, etc.
