3 hard-boiled egg yolks
1 tablespoon white wine vinegar
1 tablespoon mild or hot mustard
pinch of sugar
300 g/11 oz tomatoes, peeled and diced
2 raw egg yolks
25 g/1 oz butter
salt and pepper


1.Mash the hard-boiled egg yolks in a saucepan, then stir in the vinegar, mustard, sugar and tomatoes and season with salt and pepper.
2. Set the saucepan over a low heat to warm through, then move it slightly off the heat and stir in the raw egg yolks until combined.
3. Remove the saucepan from the heat and beat in the butter.
4.For boiled rice.
