4 bread slices, crusts removed
40 g/1 1⁄2oz butter, softened
2 tablespoons white wine vinegar 4 eggs 50 g/2oz Emmenthal cheese, freshly grated salt


1.Preheat the oven to 180oC/350oF/ re .h Gas Mark 4. Spread the bread wit the butter and place on an ovenproof dish. Bring a pan of salted water to the boil, add the vinegar and poach the eggs for 3 minutes.
2.Remove with a slotted spoon, place on the bread, sprinkle with the Emmenthal and bake until the cheese has melted.
