200 g/7 oz Italian sausages, cut into short lengths . 2 tablespoons olive oil 1 onion, chopped
1 carrot, chopped 1 celery stick, chopped 500 ml/18 fl oz passata
350 g/12 oz coarse polenta flour
salt and pepper


1.Prick the sausages, place in a dry frying pan .and · cook over a medium heat for 5 - 6 minutes until the fat runs, then remove with a slotted spoon.
2.Heat the olive oil in a saucepan, add the onion, carrot and celery anq cook for 2 minutes.
3.Pour in the passata, season with salt and pepper to taste and cook for 20 minutes.
4.Add the sausages and continue cookin for a further 10 minutes.
5.Meanwhile, make the polenta. When it is ready, turn it out on to a warm serving dish, spoon the sausage and tomato sauce all around and serve.
