1 onion, coarsely chopped
250 g/9 oz raw prawns, peeled and deveined
5 sprigs fresh flat-leaf parsley, coarsely chopped
250 g/9 oz plain flour
175 ml/6 fl oz milk
vegetable oil, for frying
salt and pepper


1.Put the onion, prawns and parsley in a food processor, season with salt and process until nearly smooth.
2.Add the flour, milk and eng Process again until combined. Season with salt and pepper.
3.Heat plenty of vegetable oil in a deep saucepan to 180°C/350°F or unt a cube of bread browns in 30 seconds
4.Carefully add 4-5 tablespoons of the prawn mixture, and cook until golden brown, about 2 minutes at a time.
5.Remove with a slotted spoon, drain on kitchen paper and sprinkle with salt.
6.Serve hot or cold.
