400 g/14 oz cooked prawns, peeled and deveined
200 g/7 oz butter, at room temperature
1 tablespoon chopped fresh flat-leaf parsley
2 teaspoons chopped fresh marjoram
4 fresh basil leaves, chopped
2 white bread slices, crusts removed, each cut into 4 squares
salt and pepper
small rocket leaves and capers, to garnish


1.Reserve 8 prawns and chop the remainder.
2.Cream the butter in a bowl, then beat in the chopped prawns, parsley, marjoram and basil and season with salt and pepper
3.Spread the mixture on the squares of bread and place on a serving dish
4.Garnish each square with a whole prawn, a small leaf of rocket and a few capers.
