2 large red peppers
2 tablespoons white wine vinegar
2 cloves garlic, chopped
3 tablespoons olive oil


1.Blanch the peppers in salted, boiling water for a few minutes until iust tender, then drain.
2.Peel off the skins, halve and remove the seeds and membranes.
3.Chop coarsely, then process in a food processor to a purée.
4.Pour the vinegar into a saucepan, add the garlic and heat for a few minutes.
5.Strain the vinegar into the food processor and add the oil. Process until smooth.
6.For steamed fish or bollito misto (mixed boiled meats)
