2 carrots, thinly sliced
2 red onions, thinly sliced
2 cloves garlic, thinly sliced
4 fresh sprigs thyme
6 bay leaves
6 black peppercoms
1 litre/1.5 pints red wine
400ml/14floz olive oil
600ml/1 pint red wine vinegar


1.Mix together the carrots, onions and garlic and arrange half the mixture in a layer on the base of a large bowl.
2.Add half the thyme and half the bay leaves, then place meat on top.
3.Cover with the remaining sliced vegetables, thyme and bay leaves and sprinkle with the peppercorns and salt.
4.Mix together the wine, olive oil and vinegar in a jug, then pour into the bowl.
5.Marinate for at least 12 hours.
6.For red meat or game.
