250 g/9 oz ricotta cheese
4 tablespoons mascarpone cheese
2 tablespoons milk
1 egg yolk
4 walnuts, peeled and chopped
1-2 tablespoons chopped fresh chives
salt and pepper


1.Place the ricotta in a bowl and stir in the mascarpone and milk.
2.Season to taste with salt and pepper. Stir in the egg yolk and add the walnuts and chives.
3.Mix well, then taste and adjust the seasoning if necessary.
4.For short pasta or canapés.
