600 g/1 lb 5 oz chestnuts


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Cut a slit in each chestnut with a small sharp knife. Spread out on a baking sheet and roast for 30 minutes.
2.Alternatively, if you have a chestnut roasting pan, put the chestnuts in it and cook over a high heat. Chestnuts are ready when the shells begin to char.
3.Remove the shells and inner skins and use either whole or mashed chestnuts to stuff roast chicken or turkey. They may a/so be mashed with melted butter, a bay leaf and a pinch of salt and pepper and served as a side dish.
