300 g/11 oz plain flour, plus extra for dusting set,
50 g/2 oz butter, softened
2 egg yolks
vegetable oil, for deep-frying
100 g/3 1/2 oz cooked ham, chopped
10 fresh sage leaves, chopped
100 g/3 1/2 oz mature provolone cheese, diced
2 1/2 tablespoons Parmesan cheese, freshly grated
1 egg, lightly beaten
1 egg white, lightly beaten
salt and pepper


1.Sift the flour with a pinch of salt into a mound on a work surface.
2.Make a well in the centre and add the butter, egg yolks and 1 teaspoon water,
3.Using your fingers, gradually incorporate the flour, adding more water if necessary.
4.Knead lightly, then form into a ball and leave to rest for 1 hour.
5.Roll out the dough on a lightly floured surface to a thin sheet, then stamp out rounds with a biscuit cutter or a glass.
6.Heat the vegetable oil to 180-1900C/350-3750F or until a cube of bread browns in 30 seconds.
7.Meanwhile, mix together the ham, sage, provolone, Parmesan and whole egg in a bowl and season with salt and pepper.
8.Spoon a little of the mixture into the middle of each round, fold over and crimp the edges to seal.
9.Brush with the egg white and deep-fry until golden brown.
10.Drain on kitchen paper and serve hot.
