5 small fresh goats' cheeses
12 green olives, stoned and sliced
4 pickled chillies, de-seeded and chopped
about 50 g/2 oz canned tuna in oil, drained and flaked
4-8 white bread slices
pickled pearl onions, to garnish


1.Cream the cheeses in a bowl, then beat in the olives, chillies and tuna.
2.Season with salt to taste.
3.Stamp out rounds from the slices of bread using a biscuit cutter or glass and spread with the mixture
4.Garnish with pickled pearl onions.
