Ingredients

½ stick/60 g unsalted butter, plus extra for spreading
1 tablespoon olive oil
4 sturdy buns
2 lb./900 g salt beef, thickly sliced
4-8 slices Swiss cheese
Sea salt and freshly ground black pepper
Yellow mustard
4 dill pickles

Instructions

1.Heat the butter in a large skillet/frying pan over a medium-high heat.
2.Add the olive oil and, after the huttor starts to bubble, crack the eggs into the pan, being carefu not to break the yolks.
3.Season to taste with salt and pepper. Fry the eggs to your liking and set aside.
4.Cut the buns in half and butter each side. Place a medium skillet on the stove over a medium heat.
5.Put the bun tons and bottoms butter side down in the pan for a few seconds until lightly toasted.
6.Remove the buns, and add 2-3 slices of beef to the bun bottoms, followed by 1-2 slices of Swiss cheese and 1 fried egg.
7.Place the bun lid on top. Serve immediately with yellow mustard and a dill pickle.
