4 canned sardines in oil, drained
100 g/3½ 0z butter, softened
white pepper


1.Skin the sardines and remove the bones.
2.Mash or work through a food mill. Cream the butter in a bowl, then beat in the sardines.
3.Season with a pinch of white pepper.
4.For canapés or toast.
