Ingredients

240 g peanut butter
1/2 level teaspoon(s) cinnamon
1/4 teaspoon(s) cloves
2 teaspoon(s) cumin
125 g coconut milk
zest, of 2 limes
juice, of 2 limes
800 g chicken, thigh fillets
To serve
souvlaki pita breads
1 lime(s), wedges
2 tablespoon(s) mint, fresh, finely chopped

Instructions

1.Place a grill pan over heat and let it get very hot.
2.In a bowl, combine the peanut butter, cinnamon, cloves, cumin, coconut milk, lime zest and lime juice until completely combined.
3.Transfer half of the sauce to a bowl and set aside.
4.Add the chicken to the remaining sauce and use your fingers to coat.
5.If you have enough time, allow the chicken to marinate for 3-4 hours.
6.Thread a piece of chicken on 2 skewers and continue threading the chicken.
7.Repeat the same process until all of the chicken is done.
8.Grill for 3-4 minutes on each side.
9.Serve with toasted pita bread, the rest of the peanut sauce, lime wedges and finely chopped mint.
