4 herring fillets, diced
1 green apple, diced
1 gherkin, drained and diced
1 shallot, finely chopped
6 fresh chives, finely chopped
2 tablespoons olive oil
80 g/3 oz butter
8 wholemeal bread slices


1.Combine the herring fillets, apple, gherkin, shallot and chives in a bowl, stir in the olive oil and season with pepper.
2.Melt a Khou of the butter in a frying pan. Add 1 or 2 slices of bread and try on both sides until golden.
3.Remove from the pan and drain off kitchen paper. Fry the remaining slices of bread, adding more butter as necessary.
4.Arrange the fried bread on a serving dish top with the herring mixture and serve.
5.Scherrer, the owner of a Hamburg restaurant with the same name, created the original recipe.
