2 tablespoons olive oil • 1 onion, cut into thin rings
300 g/11 oz canned borlotti beans, drained and rinsed
4 eggs, lightly beaten salt and pepper


1.Heat the olive oil in a frying pan, add the onion and beans and cook over a low heat, stirring occasionally, for 10 minutes.
2.Add the eggs, season with salt and pepper and stir with a fork to scramble. As soon as the eggs become creamy, remove the pan from the heat and serve immediately.
