500 g/1 lb 2 oz boiled beef, chopped
3 tablespoons olive oil
1 onion, sliced
4 fresh sage leaves
1 sprig fresh rosemary
150 ml/4 pint white wine vinegar
175 ml/6 fl oz white wine


1.Place the beef in a heatproof dish and set aside Heat the olive oil in a saucepan.
2.Add the onion and cook over a low heat, stirring occasionally, for about 10 minutes until golden brown
3.Add the sage leaves, rosemary, vinegar and a pinch of salt.
4.Simmer over a low heat until the vinegar has evaporated.
5.Pour in the wine diluted with a little water and cook for a few minutes.
6.Pour the hot mixture over the beef and leave to infuse in a cool place for several hours.
