Ingredients

400 g (13 oz) can chopped tomatoes 1 onion, chopped
1 garlic clove, crushed 2 tablespoons chopped basil
1 teaspoon dried rosemary
1 glass of red wine (optional)
3758 (12 oz) dried pasta Parmesan cheese, to serve (optional)
Tomatoes are a good source of the ACE vitamins and a major source of lycopene, a carotenoid antioxidant. Although present in raw tomatoes, lycopene is more readily absorbed from processed tomatoes such as canned chopped tomatoes.

Instructions

1.Place all the ingredients, except the pasta and Parmesan, in a saucepan and simmer, uncovered, for 15 minut
2.Meanwhile, cook the pasta according to the packet instructions until it is just tender.
3.Allow the sauce to cool a little, then transfer to a food processor or blender. Process until smooth.
4.Drain the pasta, return to the pan and toss with the sauce. Sprinkle with Parmesan, if liked, and serve with a green salad and French bread.

6.Try adding some of the following to the sauce to vary the flavour:
7.Freshly steamed vegetables
8.Canned beans, rinsed and drained
9. Tuna, rinsed and drained
10.Pitted olives
11.A handful of walnuts
