
2 large eggs | |
1 tbsp bacon grease, or ghee, avocado oil or other fat | |
1/3 cup pulled pork | |
jalapeno, sliced | |
green onion, sliced | |
dash of hot sauce | |
salt and pepper |
1. | Heat the bacon grease in a small skillet on low heat. |
2. | Crack the eggs into the skillet and cook for 30 seconds. |
3. | Add the pulled pork and jalapeños and cook an additional 2 minutes or until the eggs are done to your liking. |
4. | Transfer the eggs to a plate and top with green onion, hot sauce, salt and pepper. |
