50 g/2 oz butter
1 baby onion, finely chopped
200 ml/7 fl oz brandy
2 tomatoes, peeled, de-seeded and finely chopped
1 tablespoon chopped fresh chervil
pinch of cayenne pepper
generous dash of Worcestershire sauce


1.Melt the butter in a saucepan.
2.Add the onion and cook over a low heat, stirring occasionally, for about 10 minutes until lightly browned.
3.Add the brandy and cook until the liquid is reduced by half. Add the tomatoes and simmer for 5 minutes.
4.Add the chervil, cayenne pepper and Worcestershire sauce.
5.Mix well and pour into a sauce boat.
6.For grilled steak.
