
150 g/5 oz mushrooms, thinly sliced juice of 1 lemon, strained | |
300 g/11 ozspinach,coarse stalksremoved 25 g/1 oz pine nuts | |
4 tablespoons olive oil salt and pepper |
1. | Sprinkle the mushrooms with a little of the lemon juice and place in a salad bowl. Add the spinach and pine nuts. |
2. | Whisk together theolive oil and remaining lemon juice in a bowl and season with salt and pepper. Pour the dressing over the salad, toss and serve. |
